Here is my recipe for Mashed Sweet Potatoes...they are so yummy! The thing is they are not actually 'sweet potatoes' but yams. But I've always just called them sweet potatoes. When you buy them in the store, you will notice the actual sweet potatoes are a whitesh color and the yams are an orangish. We've tried the sweet potatoes before and not too good. The yams are nice and sweet.
So I buy about 3-4 big yams and cut off the ends and peel them.
I cut the potatoes into about 6 pieces, then cut those into halves or quarters.
Put the cut up potatoes into a big pot and just cover with water. Bring to a boil and boil for about 15 minutes or until soft when pierced with a fork.
When soft, drain the water. You will then need the following ingrediants: Brown Sugar, Vanilla and maple syrup.
Mash up the potatoes a bit, then add about a tablespoon of vanilla, 1/4 cup brown sugar and 1/4 cup maple syrup (you can add more or less of all...per your taste). Continue mashing up until nice and soft...then serve!
